Lamb and Eggplant Moussaka

A delicious low-carb version of the classic Moussaka, featuring lamb and eggplant with a creamy keto-friendly sauce.

1Preheat the oven to 375°F (190°C).
2Slice the eggplants and sprinkle with salt. Let sit for 10 minutes to draw out moisture, then pat dry.
3Cook lamb, onion, and garlic in a skillet until browned. Add tomatoes and simmer for 10 minutes.
4Layer eggplant slices in a baking dish, add lamb mixture, and top with remaining eggplant.
5Whisk together heavy cream, egg yolks, and cheese. Pour over the top of the moussaka.
6Bake for 40 minutes until golden and bubbly.
