A delicious roast chicken flavored with herb butter and surrounded by tender roasted vegetables.

1Preheat the oven to 375°F (190°C).
2Season the chicken inside and out with salt and pepper.
3In a small bowl, mix softened butter with garlic, thyme, rosemary, and lemon zest.
4Rub the herb butter all over the chicken and under the skin.
5Place the chicken in a roasting pan and surround with chopped vegetables.
6Roast the chicken for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
7Let the chicken rest for 10 minutes before carving and serving with the roasted vegetables.
