Coconut Lime Chicken Curry

1Season chicken thighs with salt and pepper.
2In a large skillet, heat oil over medium heat and brown the chicken thighs.
3Remove the chicken and set aside. In the same skillet, sauté onion, bell pepper, garlic, and ginger until soft.
4Add red curry paste and cook for 2 minutes.
5Pour in coconut milk and lime juice, bring to a simmer, then add the chicken back to the skillet.
6Cook for 20 minutes until the chicken is fully cooked and the sauce has thickened.
7Garnish with chopped cilantro and serve.
