Beef Bolognese with Spaghetti Squash

A rich and hearty beef Bolognese sauce served over roasted spaghetti squash.

1Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half, remove seeds, and roast for 40 minutes.
2In a large skillet, sauté chopped onion, carrot, celery, and garlic until softened.
3Add ground beef and cook until browned.
4Stir in tomato sauce, bay leaf, and salt. Simmer for 20 minutes.
5Scrape out the strands of the spaghetti squash and top with the beef Bolognese sauce.
