Lemon Butter Chicken with Roasted Brussels Sprouts

A deliciously simple keto meal of chicken cooked in lemon butter sauce, served with roasted Brussels sprouts.

1Preheat oven to 400°F (200°C).
2Toss Brussels sprouts in olive oil, season with salt and pepper, and spread on a baking sheet. Roast for 20-25 minutes until crispy.
3In a skillet, melt butter and cook chicken thighs until golden and cooked through, about 5-7 minutes per side. Remove and set aside.
4In the same skillet, add lemon juice, garlic, and remaining butter. Cook for 2-3 minutes until sauce thickens. Serve chicken with roasted Brussels sprouts and lemon butter sauce.
