Thai Peanut Chicken Stir-Fry

A flavorful Thai-inspired stir-fry with tender chicken, crunchy vegetables, and a creamy peanut sauce.

1Season chicken with salt and pepper, then stir-fry in a large pan until cooked through. Remove and set aside.
2In the same pan, stir-fry the bell peppers, broccoli, and carrots until tender.
3In a bowl, mix together peanut butter, soy sauce, lime juice, garlic, ginger, and red pepper flakes to create the sauce.
4Add the chicken back to the pan, pour the sauce over, and stir until everything is well coated.
5Cook for another 2-3 minutes until heated through.
6Serve hot, garnished with chopped peanuts and fresh cilantro if desired.
